The “GREEN KEY” is the leading standard of excellence in environmental responsibility and sustainability in the tourism industry. It represents the commitment of providers to adhere to strict criteria set by the Foundation for Environmental Education (FEE) (the DOVES Association is authorized to implement international environmental programs). How do we contribute to more sustainable practices?
WE DRINK TAP WATER!
Our tap water is safe to drink! The Koper Waterworks ensures that the water that comes out of our pipes is safe and rich in essential nutrients for humans. Water is the most important human resource, so we offer our guests tap water free of charge with every meal.
CONSCIENTIOUS WASTE SEPARATION
We sort our waste in accordance with the guidelines. We always dispose of waste in appropriate containers and never in nature or drains. Please ask our staff for assistance if you are unsure where to dispose your waste. We are happy to help and guide you to the nearest recycling area (just a few meters from the restaurant).
CAREFUL USE OF ELECTRICITY – REDUCING OUR CARBON FOOTPRINT
When we don’t need lights, we turn them off! This applies to our restaurant as well as our homes. Sometimes it’s better to light a romantic candle at dinner than to illuminate the room fully.
ENJOYING THE LOCAL WEALTH OF NATURAL AND CULTURAL HERITAGE
Our restaurant has been known for years for sourcing our ingredients from local suppliers who prioritize respect for nature. On your plate, you will find fresh, locally caught fish, vegetables from local farmers, meat of Slovenian origin, wine from our vineyards…
Occasionally, we recommend recipes to our guests that can be found on our menu – we encourage you to also prioritize local producers when choosing your ingredients!
CAREFUL USE OF DETERGENTS AND WATER FOR LAUNDRY
Restaurants around the world use enormous amounts of detergent and water for washing linens and dishes. To reduce this amount, we ask that you keep your napkin and tableware until the end of your meal.
